Good Eats Meatloaf
Get all your ingredients together
Add the croutons, black pepper, cayenne pepper, chili powder, and thyme in the food processor
Pulse until well combined and place in a large bowl
Now add the onion, garlic, carrot and red pepper in
And pulse away until it looks something like this
Add the vegetable mixture to the crouton mixture
Now top that off with the beef
And some salt
Gently combine with hands, don't press on the meat
Add in your egg and combine gently again
Add the meat mixture to your loaf pan
Flip it upside down on a foil lined baking sheet
Unveil your mold of meat, throw it in the 325 degree oven for 10 minutes
Add the ketchup, cumin, Worcestershire, hot sauce and honey in a small bowl and whisk together
After 10 minutes, open the oven and glaze your meatloaf, work quickly here
Put in back in the oven for another 35- 40 minutes or until the internal temperature has reach 155 degrees. Pair with a lightened up mashed potato recipe you can see over on my other blog and enjoy!

Ingredients
* 6 ounces garlic-flavored croutons
* 1/2 teaspoon ground black pepper
* 1/2 teaspoon cayenne pepper
* 1 teaspoon chili powder
* 1 teaspoon dried thyme
* 1/2 onion, roughly chopped
* 1 carrot, peeled and broken
* 3 whole cloves garlic
* 1/2 red bell pepper
* 18 ounces ground chuck
* 18 ounces ground sirloin
* 1 1/2 teaspoon kosher salt
* 1 egg
For the glaze:
* 1/2 cup ketchup
* 1 teaspoon ground cumin
* Dash Worcestershire sauce
* Dash hot pepper sauce (I used Frank's Red Hot)
* 1 tablespoon honey
Directions
Heat oven to 325 degrees F.
Add the croutons, black pepper, cayenne pepper, chili powder, and thyme in the food processor. Pulse until well combined and place in a large bowl. Now add the onion, garlic, carrot and red pepper in the food processor and pulse again until well combined. Add this vegetable mixture to the crouton mixture in the bowl. Add in the beef and gently mix together with hands, careful not to press the meat too much. Add in the egg and gently combine. Press meat mixture into a loaf pan for shape and turnover on to a foil lined baking sheet. Bake for 10 minutes while you put together the glaze.
Combine the ketchup, cumin, Worcestershire sauce, hot pepper sauce and honey in a small bowl and whisk together. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes. Cook for another 35-40 minutes or until internal temperature has reached 155 degrees.
